A Residential Mycology Experience Inside One of Asia’s Most Sustainable Culinary Ecosystems

This is a 6-day applied mycology immersion, hosted at Locavore NXT — ranked among Asia’s Top 50 restaurants and globally recognised for regenerative food systems.

Learning takes place inside the Root System beside the glass mushroom cultivation chamber, placing you inside a living ecosystem of fungi, food, design and sustainability.

This is not a hobby workshop.
It is a full-spectrum, systems-based immersion into mushrooms.

• Agar, liquid culture, spawn & fruiting theory
• Cordyceps cultivation
• Mycofabrication & biomaterials

Your Host

Aaron Boyer is an applied mycology practitioner, researcher, and educator working at the intersection of cultivation, extraction, regenerative systems, and fungal applications in food, materials, and wellness.

Based in Bali, Aaron has spent years developing cultivation systems, extraction workflows, mycofabrication concepts, and small-scale commercial infrastructure for mushrooms and mycelium-based products. His work focuses on understanding fungi as living systems rather than isolated techniques — connecting genetics, environment, cultivation, chemistry, material science, and application into one continuous learning process.

Rather than teaching from textbooks or slides alone, Aaron teaches directly from hands-on practice, experimentation, and real-world system building. His approach emphasises:

• Systems thinking over recipes
• Understanding over memorisation
• Integrity over hype
• And long-term ecological and commercial responsibility

This immersion reflects not only technical knowledge, but years of iterative learning, failures, refinements, and deep engagement with fungi as both organisms and collaborators.

Aaron’s teaching style is clear, grounded, and accessible — designed to empower participants to think independently, critically, and creatively with mycology.
